FOOD PHILOSOPHY

I cook food I enjoy eating, built around classic technique, seasonal ingredients and flavours that work.

No gimmicks. No unnecessary fuss.

Just good food, done properly.

ON THE FUTURE

I’m always looking ahead – pushing myself and my food further.

A second Michelin star is still a goal, but ultimately I want to build something of my own from the round up – shaped by my own vision.

I’m a huge fan of Thai food, and one day l’d love to explore a fine-dining concept combining my classical training with Thai flavours.
